Our first family movie night was a hugh hit! If you were reading and remember, having family movie nights themed around Disney movies were part of my 2014 Goals & Resolutions. This past weekend, we watched The Princess and the Frog. I wrote my plans in my Tiana and Naveen post for the American Tourister Giveaway. We stuck to the plan pretty well!
We started off with Jambalaya. Originally I wanted to make gumbo for diner, but the thought of making a roux scared me! I got the recipe from Southern Living.
Ingredients:1 lg onion diced
1 lg green bell pepper diced
1 pound smoked sausage cut into 1/4 inch slices (We added 1/2 pound of shrimp to ours!)
1 T olive oil
4 cups chopped cooked chicken
3 cups uncooked long grain rice
2 (10oz) cans French onion soup, undiluted
1 (14oz) can chicken broth
1 (14oz) can beef broth
2-3 t creole seasoning
2-3 t hot sauce
Garnish- fresh cilantro sprigs
Saute these ingredients in hot oil in a Dutch oven 4-5 minutes or until sausage browns. Stir in chicken and next 6 ingredients.
Bake covered at 350 for 40 minutes stirring after 30 minutes. Garnish if desired. Served 8-10.
The next "project" was to make Swamp Water to drink! Here is the recipe again:
Swamp Water Recipe from Purple Chocolate Home
1 - 46 oz. Dole Pineapple juice
1- 12 oz limeade concentrate, thawed
1 - 14 oz. sweetened condensed milk (this makes the punch murky)
24 oz. water
24 oz. 7 Up or Sprite
Americolor's Electric Green Food color
Blue food color
Mix everything together , adding the food coloring until you get the murky green you want. Serve chilled or over ice.
Our plans for making Mardi Gras masks were tabled though! C-man wanted me to do all the work while he watched. He said he was too tired and just wanted to watch the movie- so we did!
I forgot how funny this movie was- until I watched it with a 5 year old! He cackled laughing so hard. It was awesome. I also cried, like usual when Ray is finally with Evangeline!

What a fantastic movie night! You are an adventurous cook! The thought of making Jambalaya scares me but I think I could really get into Swamp Water.
