Disneyland's Mint Julep Recipe

image from spoonful.com
With St. Patrick's day right around the corner, I tried to think of a "Disney" way to celebrate this holiday at home.  We found some adorable crafts and activities from Spoonful.com for the boys to do, but I was looking for something a bit more "adultish" for me and the hubby!  I was having a hard time.  There were lots of great sweets and desserts we could try, but I didn't want to waste calories on that!  So I continued to think.

Then it hit me!  A Mint Julep is the perfect green drink for St. Patrick's Day!  When we visited Disneyland in 2010, we passed the Disneyland Mint Julep Bar, but didn't stop.  Now I wish I had!  But, I was able to find a copy of this non-alcoholic recipe from Disney Food Blog.

Disneyland Mint Julep Recipe from Disney Food Blog
(Makes approximately 2/3 gallon)
1 cup sugar
3 tsp lime juice concentrate
3 cups club soda
6 Tbsp creme de menthe syrup (not liqueur)
6 oz thawed lemonade concentrate
mint leaves
pineapple slices
maraschino cherries
bamboo skewers

Dissolve sugar into club soda. Add lime juice and lemonade and bring to a boil. Remove from heat and add creme de menthe. Chill.

To serve, combine 3 parts syrup to 5 parts water. Add mint, and skewer two pineapple slices and a cherry. Serve chilled (add ice cubes if necessary).

If you want, you can always add some Irish Whiskey to give it more of a St. Patrick's Day flair!
